Read about Ruma's in The Packer!

Many fine-dining restaurants serve the unique, wild vegetable on their spring menus, leading consumers to request them at grocery stores.

The fiddlehead fern season is short, typically beginning at the end of April and running through mid-June. Company president Jim Ruma says the little-known vegetable is an important part of their business.

“The key to our success, and sometimes to our survival, has been to diversify, and fiddleheads have been a big part of that,” he said.
