Recipe for Fiddlehead Fern Soup
Soup made with fresh fiddlehead ferns are a great and unique idea for a dinner party or for a quick soup for 2. Our fiddlehead soup recipe is general for 6 servings, but can be adjusted for less or more.
Ingredients for Making Fiddlehead Soup:
1 1/2 Cups of Chopped Fiddleheads
2 Chicken Bouillon Cubes
1/2 Medium Onion, chopped or minced
2 Tablespoons of Butter
3 1/2 Cups of Whole Milk (Low-Fat Milk or 2% can be substituted, however skim milk does not taste the same with the cream.)
1/2 Heavy Cream
Salt and Pepper as necessary for tasting
How to Make Fiddlehead Soup:
First and foremost, you must thoroughly clean and prepare your fiddleheads. Wash them with continuous water, do not soak them. Remove all leaves and brown coverings. Cut the stem of the fiddleheads so that you only have the round head left. Chop remaining fiddleheads into small pieces or chunks. In order to avoid fiddlehead poisoning, you may want to boil your fiddleheads prior to chopping and sauteing them. Boil until tender for about 10 minutes. If you have cooked fiddleheads before, then sauteing is ok. Melt the butter and bouillon cubes into a medium pan. You will then saute your chopped fiddleheads for 10 minutes with your onions in the pan. Add milk and heat thoroughly. Stir in the cream and add salt and pepper for taste. Serve your fiddlehead soup steaming hot. Enjoy!

A Visit to Quebec City
This past memorial day weekend, I took a short trip across the border to visit Quebec City. I finally decided to stay at the Frontenac. For those of you that have never been to the Old City of Quebec, you have no idea what this hotel is like. Everyone who has visited Quebec, knows where the Frontenac is. It is a huge castle fortress that is beyond glamorous. I usually stay at the Days Inn on the Rue de Hotels, or the Hotel Clarendon, which is very nice, but I always wanted to stay at the FAIRMONT LE CHâTEAU FRONTENAC.
I decided to splurge this weekend and stay for 2 nights. For a hotel that averages $600 CAN per night, I was lucky to find a deal for a King room with no view. However, to my surprise I was able to finagle a room with an amazing view of the St. Lawrence River and the Quebec boardwalk. Throughout the weekend, I could hear a saxophone playing in the distance from my room. The room was nice and the room service was awesome, but nothing compared to the pool and courtyard on my floor. I was on the 6Th floor, and so was the Club Frontenac. The Club was private for the floor and had a pool, kid's pool, hot tub, gym, and outdoor courtyard.
I went to my usual places, La Piazza for pizza and pasta. I never miss the Crepe place just a few steps from the Frontenac. On Sunday night, there was an outside orchestra playing to a light show and fireworks outside the old city walls. We walked around a bit, and enjoyed some street shows and acrobatics. I had fun and it was a very relaxing weekend trip.
What I didn't see were any fiddleheads in Quebec, however I did see the trucking companies that we use going back over the border. Ruma Fruit has fiddleheads today, so I may have been travelling next to our fiddleheads. I had a great time, and I totally recommend staying at the Frontenac.

Fiddlehead Question Answered: Bar-B-Que and Fiddleheads
Ruma's Fruit does not recommend barbecuing fiddleheads to cook them. Using the Sautéeing method below is your best option. If you are insistent on having that fiddlehead barbecued taste, we recommend boiling your fiddleheads first. This will ensure that the fiddleheads are cooked thoroughly and then you may try to barbecue them. Please be warned that barbecuing can remove the fiddlehead flavoring that boiling or sauteing ensures.

How to Cook and Prepare Fiddlehead Ferns
Fiddlehead ferns can be steamed, poached, braised, and boiled. We find that boiling your fiddlehead ferns is the best way to prepare them to be sauced, sauteed, and dressed for your salad.
1 pound of Fiddlehead Ferns will provide 4 - 6 servings.
Before you start cooking your fresh fiddleheads, you must prepare the ferns . Each fiddlehead fern may be 1 - 1 1/2 inches in diameter.
How To Prepare Fiddlehead Ferns
Trim each fiddlehead base and leave only a tiny tail. If there is a brown or black covering over the fiddlehead, wash it off with cold water. Rinse all of your cut fiddlehead ferns in runny water. Do not soak the fiddleheads. Once you are satisfied with your cutting and washing, drop all the fiddleheads into a large pot of boiling water. You may salt the water as you see fit as well. Boil until each fiddlehead fern is tender. Test often and keep on boil for 5 minutes or more. If undercooked, the flavor of the fiddleheads will not come through. Drain your cooked fiddlehead fern and serve immediately. Pour melted butter on each dish to ensure flavoring.

Most fiddlehead connoisseurs prefer to spice things up a bit. Fiddleheads can be sauced with a variety of different flavors. You may want to try a Hollandaise sauce or perhaps a Maltaise cheese or other cheese sauce. Serve your fiddlehead ferns hot after drained and add 1 cup of sauce.

Drop all your cooked fiddleheads into a pot of cold ice water. Drain them and refirgerate them until you are prepared to serve. When you are about to serve your fiddlehead dish, take your fiddlehead ferns and place them into a large skillet. Pour at least 3 tablespoons of over your fiddleheads until sauteed through.

Fiddlehead Season 2008 - First Shipment Expected in 1 Week
Fiddlehead season 2008 is about to begin, and this is the earliest fiddlehead season that we have seen in a long time. Within one week's time, thousands of fiddlehead pickers will begin harvesting the first crop of fiddleheads in Canada. Slowly, the weather will get better and we will begin seeing Fiddleheads growing in Northern Maine and New York. Ruma's Fiddleheads are usually the first available for sale during the first week of the fiddlehead season. We offer packing of 10 lb fiddlehead bags within boxes of 30 - 40 lbs of fiddleheads. We ship fresh fiddleheads to anywhere within the continental USA.

Fiddleheads grow in Western Massachusetts, Vermont, Maine & Eastern Parts of Canada. Since we are close to the main growing areas of some the finest Fiddlehead fields in North America, we are able to consistently sell the 1st and last rounds of fiddlehead crops to our customers.
When most fiddlehead sellers are struggling to find crops, Jim Ruma has had a 15 year partnership with our Canadian growers as well as a long history with many Vermont, Maine, Massachusetts, and Connecticut Fiddlehead pickers. We are always on the look out for new fiddlehead pickers within New England and will arrange trucking for Fiddleheads to arrive at Ruma Fruit for our Fiddlehead Buyers.
We purchase our fiddleheads from one of the largest Fiddlehead Suppliers in Canada as well as from first time pickers throughout the Northeast. We consistently have 5000 – 20,000 lbs of Fiddlehead crop arriving daily and try our best to assure that we deliver our product fresh and in a timely manor through overnight delivery services.

Fiddlehead Delivery Options when Buying Fiddleheads
Fiddlehead Delivery Options
In order to ensure freshness, all Fiddleheads must be delivered overnight to the desired location. We have several options for delivery of our Fiddleheads.
Fiddlehead Delivery by Ruma Truck
Ruma’s Fruit & Produce is located in Everett, MA (5 minutes North of Boston). We are able to deliver fiddleheads to locations within Eastern Massachusetts, Rhode Island, and Southern New Hampshire via one of our produce trucks.
Fiddlehead Delivery by UPS
Ruma’s Fruit & Produce offers delivery of our Fiddleheads through UPS. We have a daily UPS pick up and can send your Fiddleheads with UPS using our account number and we can bill you. We also offer 3rd party billing for Fiddlehead shipments through UPS. If you have a UPS account number, we can bill your account directly for the UPS Overnight shipments. Regardless of using your account number or ours, we will choose the UPS Overnight Air Saver option that will be the most cost effective for you unless you request a different option.
Fiddlehead Delivery by FedEx
We offer delivery of our Fiddleheads through FedEx. If you have a FedEx account number, we can arrange delivery for you by using 3rd party shipping. As stated above, all fiddleheads must arrive at the designated location the next day after purchase to ensure freshness. We will choose the FedEx Standard Overnight option that will be the most cost effective for you unless you request a different option.
Fiddlehead Delivery by Air
Ruma’s Fruit has delivered Fiddleheads by Air via United Airlines and Continental Airlines. All shipments by air require the fiddlehead buyer to have an account with one of these airlines. We arrange the drop off at Logan Airport in Boston. We request that you place your order early in the morning for Fiddlehead deliveries by air. Each airline has a 2 – 5 hour window in which the air shipments must be dropped off before the scheduled flights.
Pick Up Fiddleheads
We have the option of pick up for Fiddleheads as well. We are located conveniently next to the New England Produce Center in Chelsea, MA.
